Ingredients
4 day old croissants, sliced in half
- 4 tbsp sliced almonds
- Powdered sugar for dusting
- ½ cup water
- ⅓ cup sugar
- 1 tbsp orange juice (optional)
- ½ cup Chinese Almond Cookie Butter
- 4 tbsp sugar
- Pinch of salt
- 4 tbsp butter, softened
- 1 beaten egg
Simple Syrup
Frangipane
Directions
Preheat the oven to 350 F.
- Make the simple syrup by boiling the water, sugar, and orange juice on high heat until sugar is dissolved.
- While the simple syrup cools to room temperature, make the frangipane by whisking the Chinese Almond Cookie Butter, sugar, and salt in a bowl. Then mix in softened butter. Then an egg until the texture is combined and fluffy.
- Dip or brush the inside of the croissant slice with simple syrup. Set on a lined baking sheet.
- Use a knife to spread the frangipane on the base of the croissant and sandwich it with the top.
- Spread more frangipane on the top of the croissant.
- Sprinkle with almond slices.
- Bake for 15-20 min until the edges have begun to carmelize. Let it cool before dusting with powdered sugar.
