Ingredients

1 large soft tortilla

2-3 slices spam
-
2 eggs
-
handful of shredded cheese of choice

1 tbsp Black Sesame Crunchy Butter
-
salt and pepper to taste

½ avocado, smashed

dollop of sour cream or Greek yogurt

½ tbsp unsalted butter
Directions
Cook spam in pan on medium heat until crispy on both sides, about 5 minutes. Remove from heat and set aside.
Scramble eggs in same pan over low heat, adding salt and pepper to taste. Sprinkle on shredded cheese and let it melt. Remove from heat and set aside.
Lay tortilla on flat surface. Cut from the middle of the tortilla up to the top edge.
Place ingredients into 4 quadrants.
Top left: scrambled eggs with Black Sesame Crunchy Butter spread on top
Bottom left: mashed avocado
Top right: spam
Bottom right: dollop of sour cream of Greek Yogurt
Fold the tortilla: fold top quadrant down, then to the right, then up. You should have a triangle.
Melt unsalted butter in pan on medium heat. Heat tortilla until golden and crispy on both sides, about 3-5 minutes. Enjoy!
