Ingredients
- 1 ½ cup all-purpose flour (180g)
- 1 tsp baking powder
- 1 tsp salt
- 1 tablespoon cornstarch
- ½ cup butter, softened (1 stick/8 tablespoons)
- 1 cup granulated sugar (200g)
- 1 egg
- 1 tablespoon vanilla
- 2 ½ tablespoons Black Sesame Crunchy Butter

Directions
In a large mixing bowl, cream the softened butter and granulated sugar until slightly fluffy.
- Beat in egg, vanilla, and Black Sesame Crunchy Butter until uniform.
- Dump in all of the dry ingredients, along with ¾ cup of the rainbow sprinkles. Save the rest of the sprinkles for topping the cookies right before baking.
- Cover the dough with plastic wrap and chill in the fridge for 30 minutes. This helps yield chewier cookies.
- Preheat oven to 325°F/162°C and line two baking trays with parchment paper or silicone mats.
- Scoop cookies (about 1 ½ tablespoon each of dough) and roughly shape into a ball. Dip each cookie into rainbow sprinkles.
- Place cookies on lined baking sheet, sprinkle side up and about 3 inches apart. Bake for 10-13 minutes, or until edges are just set.
- Remove cookies from oven and let cool on baking sheet for 5 minutes before transferring to wire rack to fully cool.
