A nutty, rich black sesame cake infused with citrus and olive oil, topped with a smooth dark chocolate-sesame shell and a sprinkle of flaky sea salt. Light yet indulgent, this cake is the perfect balance of earthy, sweet, and savory flavors.
Ingredients

½ cup + 1 tbsp olive oil

1 cup all-purpose flour

½ teaspoon kosher salt

flaky salt as desired

½ teaspoon baking powder
-
1/8 teaspoon baking soda

1 3/5 cups granulated sugar

2 large eggs
-
zest from 1.5 oranges
-
1 tablespoon freshly squeezed orange juice

5/6 cup whole milk
-
2 tablespoons black sesame powder
-
2 tablespoons Crunchy Black Sesame Butter

1 ½ tablespoon black sesame seeds

2 tablespoon 70% dark chocolate
Directions
Olive Oil Cake
Preheat oven to 350F and prepare an 18 x 12 baking dish with a very thin layer of olive oil.
In bowl, combine orange zest and granulated sugar until the sugar is homogeneous in light orange color / wet-sand textured. Then add black sesame powder, and re-mix. Set aside.
In a large bowl, whisk dry ingredients together (flour, salt, baking powder, baking soda), and set aside.
In a stand mixer, add orange sugar, black sesame mix, and eggs. Whisk until homogeneous, and slowly add in olive oil, orange juice, and milk.
Add in dry mix into stand mixer and combine batter until just homogeneous in color. Do NOT over mix.
Pour batter into the large pan. Sprinkle sesame seeds on top. Bake for ~30 minutes and check periodically with a toothpick or cake tester.
Remove and fully chill for 1 hour.
Dark Chocolate Shell
To make the shell, combine dark chocolate and black sesame paste into a very low-heat saucepan. Season with a small dash of kosher salt.
Spread sesame chocolate on chilled cake, zest more orange, season with large flaky sea salt, and re-chill in fridge for at least 30 minutes before slicing and serving.
