Ingredients
- 3 cups strawberries rinsed and hulled (1 ½ cups strawberry puree)

¼ cup granulated sugar

¼ cup cold water

1 packet unflavored gelatin 0.25 oz or 7 g per package

1 cup heavy whipping cream

6 tbsp Salted Plum Cookie Butter
Directions
Combine strawberries and sugar in a food processor or blender and blend until smooth (you might need an extra ¼ cup of water if using a blender). Strain with a fine mesh strainer into a small saucepan. Bring to a boil, reduce heat, and simmer for 3-4 minutes or until slightly thickened.
- Combine ¼ cup cold water and gelatin, mix well, and let rest for 1 minute. Add to the berry mixture and stir. Simmer on medium-low heat for about 2 minutes more or until gelatin is completely dissolved.
- Pour into a bowl and refrigerate to cool until slightly thickened, about 45-60 minutes.
- Once cooled, mix the strawberry mixture with a hand mixer for 2 minutes. Add the Salted Plum Cookie Butter and mix for 30 more seconds.
- Add heavy cream. Continue mixing until thick and fluffy, about 3-5 minutes.
- Spoon the mousse into dessert cups and refrigerate for at least 2 hours before serving. You can also add an extra tablespoon of Salted Plum Cookie Butter at the bottom of each dessert cup.
- To serve, you can add an extra dollop of whipped cream on top.
Recipe Note
Keep leftover mousse covered in the fridge for up to 3 days. Freeze portions for up to 2 months.
