Homestyle Chinese restaurant, Woon, created this addicting and refreshing twist on the classic dan dan noodle recipe using Rooted Fare x Woon's limited-edition Year of the Snake spread: Seaweed Sesame Cashew Butter. Try this with Woon's Frozen Chewy Noodles!

Seaweed Sesame Dan Dan Noodle

Ingredients

  • 2 tbsp Seaweed Sesame Cashew Butter

  • 2 tbsp soy sauce

  • 2 tbsp warm noodles water (or enough for desired consistency)

  • 2 tsp dark vinegar

  • 2 tsp sugar

  • 1-2 cloves minced garlic

  • sliced scallions for garnish (optional)

  • 2 tbsp chili oil or chili crisp (optional)

  • 2 servings Woon’s Frozen Chewy Noodles (or any thicker Chinese noodle)

  • 1 Persian cucumber, julienned

Directions

  1. Mix together the Seaweed Sesame Cashew Butter, chili oil, soy sauce, vinegar, sugar, and garlic.

  2. Remove seeds from cucumbers and thinly slice them lengthwise or julienne, salt liberally for 10 min, rinse and add on top for garnish and freshness.

  3. Cook the noodles until desired texture. Save some cooking water, then drain.

  4. Toss noodles with the sauce, slowly add some noodle water to help thin out the sauce to your desired consistency.

  5. Top with cucumbers and scallions and a drizzle of more chili oil or chili crisp. Enjoy!
